This sweet potato pancakes recipe is easy, healthy, and tasty! What more could you ask for?!
I find that this recipe is a great go-to if you are on Whole30 or just looking to cut down on flours and butters that comes with normal pancakes! They will be a little mushy in the middle and have a crustiness to the outside, which makes it just melt in your mouth. I love making these for our baby especially because it is mushy and healthy, a win win when looking for food to feed baby! Whip these up in the morning with a little syrup or peanut butter and start your day fresh!
TIPS
-Blend a little milk (I used oat milk) with the sweet potatoes before adding and blending the eggs
-Add in cinnamon and/or cloves for some extra flavor
-Spread some peanut butter, almond butter, or cookie butter (from Trader Joe’s) to make it extra tasty without maple syrup

Sweet Potato Pancakes
Ingredients
- 4 Eggs
- 2 Sweet Potatoes
Instructions
- Bake, Air Fry, or Heat up Sweet Potatoes till they are mushy
- Scoop out sweet potato and put it in blender
- Add eggs and blend
- Cook pancakes on skillet on Medium-High for 3-5 minutes on each side
- Add syrup or your favorite spread and enjoy!
